본 발명은 뽕잎찹쌀고추장 및 그의 제조방법에 관한 것으로, 좀더 상세하게는
뽕잎 특유의 색감이 증진된 뽕잎을 갈아 만든 뽕잎가루와 찹쌀고추장의 특유의
감칠맛과 뽕잎 특유의 향,맛,영양 등을 유지할 수 있도록 한 뽕잎찹쌀고추장
및 그의 제조 방법에 관한 것이다
Glutinous rice hot pepper paste(Chapssal Gochujang) containing mulberry leaf powder is provided which has the efficacy of mulberry leaf and retains characteristic taste, flavor and nutrient of traditional red pepper paste. Glutinous rice hot pepper paste contains 5% by weight of mulberry leaf powder. For an example, 5% by weight of mulberry leaf powder, 24% by weight of glutinous rice flour, 8% by weight of fermented soybean powder, 5% by weight of malt, 25% by weight of red pepper powder and 23% by weight of purified water are put into a traditional earthenware jar and aged for 6 months in a sunny place.
